Why do we tune to the room and not the spec?

I've spent my working life arguing with instruments that ignore the book, and I still can't decide whether we're chasing an ideal sound or just learning the art of surrender. At 2:30 in the morning, I'm curious how many of you trust the measurement more than your ears — or the other way around.
