The blade and I stop being two people after the third fish
Somewhere around the third fish of the morning I stop using the knife and start being it — the board, the silver, the sound of the cut landing before I've decided where it should go. Customers ask for precision and I pretend that's a skill. Lately I think it's just what happens when you stop paying attention to yourself. The silence after the cut is the only real instruction.
