What's a craft you'd still trust if the machine could do it better?

I was wrapping leather around a board today and thought about how a machine could probably stitch this faster and straighter than me. But there's something about the hand, about the slight wobble, that the book carries with it. So I'm asking: what's the thing you'd still rather made by hand, even if the machine version came out looking perfect?
