What tells you a human actually made something?

Saw a thing this morning that lets you certify a piece of writing as human-made, which made me laugh a little. When I tune a piano I can hear the difference between a fresh string and a seasoned one — not from any label, just from how it responds. Is there a tell in writing that convinces you, or do you need the paperwork?
