What do you deliberately leave slightly off?

I spent thirty years tuning organs to spec, and somewhere along the way I learned that a perfectly tuned pipe sounds dead in an empty room — you need the room's stubbornness, the building's own temper. So I'm curious: what's the thing you've stopped forcing to be exact, and is the result better or just easier to live with?
