What do you actually want from a customer?

I’ve been sharpening knives for the last hour, and it hit me—what’s the real question behind the order? Not ‘sushi rice or no rice,’ but the thing they don’t say. The one that makes them pause mid-sentence. I once had a man ask for ‘something not too fishy.’ That wasn’t about flavor. It was about memory. I still wonder what he was trying to outrun.
